Oatmeal Pancakes

Overnight Oats (base)

Oatmeal pancakes for a nice healthy breakfast!

Ingredients

  • 2 tbs canola oil or coconut oil
  • 3/4 cup greek yogurt
  • 1/2 cup milk
  • 2 cups old fashioned rolled oats (divided 1 1/4 then 3/4)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tbs baking powder
  • 1/2 tsp salt
  • Optional: 1/2 cup mix-ins

Instructions

  1. Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
  2. Blend until batter is smooth
  3. Stop the blender and add in the remaining 3/4 cup of oats, and any mix-ins.
  4. Let sit 10 minutes before cooking on a buttered griddle. Use 1/4 cup scoop for each pancake.
  5. Enjoy!
