Oatmeal Pancakes

Overnight Oats (base)
Oatmeal pancakes for a nice healthy breakfast!
Ingredients
- 2 tbs canola oil or coconut oil
- 3/4 cup greek yogurt
- 1/2 cup milk
- 2 cups old fashioned rolled oats (divided 1 1/4 then 3/4)
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbs baking powder
- 1/2 tsp salt
- Optional: 1/2 cup mix-ins
Instructions
- Place the oil, Greek yogurt, milk, 1 1/4 cups oats, eggs, maple syrup, vanilla, cinnamon, baking powder, and salt in a blender.
- Blend until batter is smooth
- Stop the blender and add in the remaining 3/4 cup of oats, and any mix-ins.
- Let sit 10 minutes before cooking on a buttered griddle. Use 1/4 cup scoop for each pancake.
