Classic Fig Jam

This is perfect stirred in yogurt with granola, served with cheese, or a base for a savory flatbread!

Makes six 8 ounce jars

Ingredients

  • 4 cups of figs (fresh or frozen with stems removed)
  • 4 cups of sugar
  • 1/2 cup lemon juice
  • 1/2 cup water
  • 4 tbs pectin
  • 1/2 tsp butter

Instructions

  1. Prepare canner and jars
  2. Add lemon juice, water and sugar to a large stainless steel pot with a heavy bottom.
  3. Quarter 2 cup of figs, then chop the remaining two cups of figs.
  4. Add figs, sugar and pectin to the stainless steel pot.
  5. Bring to a boil, stirring for a few minutes (not more than 5)
  6. Skim foam. Add 1/2 tsp if desired to reduce foam.
  7. Process in a water bath canner for 10 minutes. Remove the lid and turn the heat off. Remove jars after 5 more minutes have passed.
